The BEST cake... seriously!

Since this is a "health" blog I will only post things that are DELICIOUS and healthier than what you are used to!

Also, I am all about EASY. So don't expect anything gourmet from me! (haha!)

These are seriously the most delicious and moist cakes I have ever made! The first time I tried them I couldn't believe how they were made... it seemed too easy, and a little strange... here is what I mean.

Here are 3 of my favorite recipes that substitute eggs and oil for healthy ingredients (Greek yogurt, apple sauce or black beans).


- DEVILS FOOD (chocolate) CAKE -
About 180 calories and 3.5g fat per cupcake or 1/12 of cake



1 box - Devils Food Cake Mix
1 cup - Greek Yogurt (non-fat)
1 cup - Water (for really dense and brownie-like cake you can skip the water)


1. In a large mixing bowl add all ingredients. Mix well.


2. Bake! Spray 9x13" pan or muffin tins with non-stick spray. Follow the instructions on the back of the cake mix box for baking times (it will actually bake a few minutes faster - so be sure to check it). Cool.

* Serve with Light Cool Whip as the frosting. =)





 - YELLOW CAKE -
About 180 calories and 3.5g fat per cupcake or 1/12 of cake



1 box - Yellow Cake Mix (any brand, any variety of yellow)
1 cup - Apple Sauce (preferably no-sugar added)
1 cup - Water



1. In a large mixing bowl add all ingredients. Mix well.

2. Bake! Spray 9x13" pan or muffin tins with non-stick spray. Follow the instructions on the back of the cake mix box for baking times (it will actually bake a few minutes faster - so be sure to check it). Cool.



* Serve with Light Cool Whip as the frosting to keep the calories low (or use my "Camille's Chocolate Frosting" Recipe (which is NOT healthy... but SO TASTY)!








- CHOCOLATE CAKE -


About 180 calories and 3g fat per cupcake or 1/12 of cake

1 box - Chocolate Cake Mix (any brand, any variety of chocolate)
1 can - Black Beans (12 oz)
1 cup - Water

1. Rise and Drain the black beans. Put cleaned beans back in the original can and refill the can with water (this removes the excess sodium with fresh water).

2. Puree in a blender.

3. In a large mixing bowl pour the dry cake mix in. Add the pureed black beans.

4. Add 1 cup water. Mix well.

5. Bake! Spray 9x13" pan or muffin tins with non-stick spray. Follow the instructions on the back of the cake mix box for baking times (it will actually bake a few minutes faster - so be sure to check it). Cool.

* Serve with Light Cool Whip as the frosting... YUMMY!!!












ENJOY!!!!   

Pssst.... If you add 1 package of semi-sweet chocolate chips to the Chocolate or Devil's Food cake it is sooooo good! More fat and calories... but a delicious treat!
